Another alternative I've seen suggested is "Latine." I do think that would be a lot better than "Latinx." Someone had written an article recently noting that in Spanish, if you have a group of 20 people and 19 of them are female and 1 male, the masculine of the plural form is supposed to be used. Only if all are female is the feminine plural used. I understand the issue with that, because it's rather unfair that 19 women should be cancelled out by 1 man in a group. My problem with this widespread usage of "Latinx" is that it's based on the idea that "Latino", when used to describe culture or groups, has sexist intent. It may have patriarchal origins, but we shouldn't assume it to be meant like that if somebody uses it today. In general, we're better off not assuming the worst of others. Until the Spanish-speaking community at large decides to change the rule, we should just stick with "Latino."
